Ingredients:

1 cup heavy cream for 1 cup full fat coconut milk

 butter

swapped regular salt for sea salt and reduced it by ½

added a ½ teaspoon more of vanilla

added 1 tablespoon lemon

corn syrup

Directions:

  1. In a small pot, over medium heat, bring this mixture of ingredients to boil:  lemon juice, coconut sugar, and water.
  2. Once the caramel ingredients start to boil, start adding sea salt, vanilla and coconut milk. As you stir, let it begin to simmer for approximately 15 minutes. The consistency will become thick and dark. Scrape the edges and stir occasionally to prevent burning.

  2. Place fish on a large baking sheet. And then dizzle 2 tbls of oil on fish
  3. On a small plate, season each piece of fish with salt, pepper, cajun seasoning and cornmeal
  4. Place seasoned fish on the baking sheet. 
  5. For approximately 15 minutes, bake until golden

4.  Taco Tomatoes

Ingredients:

1 tbsp. extra-virgin olive oil

3/4 lb. ground beef

1 (1-oz.) packet taco seasoning

4 large, ripe beefsteak tomatoes

1/2 c. shredded Mexican cheese blend

1/2 c. shredded iceberg lettuce

1/4 c. sour cream

Directions:

  1. Over medium heat, brown ground beef, onions and taco seasoning in a large skillet for about 5 minutes
  2. Drain fat
